There’s an old saying in the Carolinas: If you don’t like the weather, just wait five minutes. The same, really, could be said about Winston-Salem trio Jews and Catholics, which whips through more styles than your average college radio free-format show on last year’s Civilized, veering from noisy, art-damaged squalls (“You’re the Blood,” “Sabine Women”) to Bowie-inflected stomps (“Sharkitecht”) to Versus-style indie pop (“Ambulance”).
