Charlotte, NC (March 9, 2021) – Sage Restaurant Concepts – a Denver-based group known for consistently crafting exceptional experiences where food, drink and design meet and mix – will debut its newest restaurant in Charlotte’s University City: Golden Owl Tavern.
Designed to hit the right pace for any occasion, Golden Owl Tavern will open inside the highly-anticipated UNC Charlotte Marriott Hotel & Conference Center on Wednesday, March 31, located right off the LYNX Blue Line, at the intersection of North Tryon Street and J.W. Clay Boulevard.

Sage Restaurant Concepts, launched in 2005 under 37-year-old Sage Hospitality Group, boasts more than 30 restaurant and bar concepts in 11 states across the country in top cities such as Chicago, Denver, Philadelphia and Portland. Golden Owl Tavern is Sage’s latest restaurant concept. The restaurant group is bringing this first-of-its-kind dining experience to Charlotte, which also happens to be their first foray into the Tarheel state.
Approachable and Timeless Design
The more than 7,000 square-foot restaurant, which also features a lounge and outdoor patio, will seat up to nearly 200 guests at full capacity.
Golden Owl Tavern’s main dining room will provide an elevated experience with a view from every angle, including a glance at chef creations from the open kitchen and glimpses of the vibrant bar that will include televisions to watch the big game. From the warm textures to the subtle sophistication, every detail in the restaurant was deliberately selected to create a welcoming space that the local community and hotel guests will appreciate, regardless of the occasion.
Guests will also enjoy the restaurant’s patio, where they can soak up the sun or sit fireside for an evening cocktail and conversation.

Food and Drink Inspired by the American South, Always with a Clever Twist
While there’s a southern-American consistency among Golden Owl Tavern’s menu items, the interesting flavor pairings and dining options are reflective of the different ways diners can enjoy the restaurant.
Snacks and shareables range from bacon fat fried crispy boiled peanuts and Nashville Hot Chicken deviled eggs to smoked duck wings in a sorghum apple glaze and bourbon barrel tosazu Carolina Oysters.
Double smashed patty burgers, wood-fired pizzas and a buttermilk fried shrimp po’ boy with Carolina comeback sauce are just a few of the hand-held favorites.
The entrée menu features baby back ribs, scallops and grits – a twist on the classic shrimp and grits, a bourbon marinade drunken ribeye and 14-ounce bone-in maple glazed pork chop.
Breakfast and brunch menus showcase different takes on eggs benedict, a country fried steak with eggs and pickled onions, customizable salads and hearty soups, an open-faced bison meatloaf sandwich and a variety of po’ boys, among countless other offerings and flavors.
The dessert menu is a must-try with southern-inspired favorites like Golden Owl Tavern’s version of banana pudding, pineapple upside down cake and chocolate pecan pie, among several other specialties made in-house from scratch daily.
The beverage menu will be fluid, ensuring variety and spontaneity. It will feature local craft beers, classic cocktails prepared with precision, creative signature libations and a compelling wine list for guests to explore.

UNC Charlotte Marriott Hotel and Conference Center
Golden Owl Tavern will be nestled inside the UNC Charlotte Marriott Hotel & Conference Center, located on the light-rail line at the front door of UNC Charlotte. The 226-room hotel will include a 24,000-square-foot conference center.
Operating Hours
DINE-IN dinner service will be available Monday through Thursday from 4 – 10 p.m., Friday from 4 – 11 p.m., Saturday from 3 – 11 p.m. and Sunday 3 – 10 p.m. DINE-IN brunch service will be available Saturday and Sunday from 11 a.m. – 3 p.m.
The full menu will be available for TO-GO every day during regular business hours.
