Chef Dave Smoke-McCluskey (Mohawk), forager, culinary educator, and owner of Corn Mafia Small Batch Hominy, discusses the science of nixtamalization and its impact on the agricultural Indigenous diet. Chef McCluskey’s Lunch and Learn Lecture is held in conjunction with the 16th Annual Native American Studies Week.
