OK, it’s a chain, but these potatoes, with their Idaho birth place announced at the fry line, are hand cut, fried in peanut oil, and served two ways: regular or with Cajun spice. The surrounding brown paper bag is dotted with hot grease. These fries, the outer ones (with skin), are cooked to perfection.
