Derrick Dewalt, general manager at Morton's 

Derrick DeWalt has been in the food service industry for over 30 years. He rose through the ranks, starting out as a dishwasher when he was just 15 years old. His love affair with food started when he was little in his grandmother's kitchen. "I have always been interested in food, from a very young age I wanted to learn everything about being in the kitchen," DeWalt says. He is currently the general manager at Morton's The Steakhouse.

Creative Loafing: What is it like to be the general manager of one of the most popular steakhouses in Charlotte?

It's great. We pride ourselves on outstanding service and great food. We want people to come in and really enjoy dining with us. For me, personally, it's like inviting someone over to your house to eat. You want to ensure that everyone truly enjoys their time with you. Our goal is to provide and escape from the everyday.

What would you say is your personal management style?

I like to think that I manage with strong integrity. I like to provide a work atmosphere where everyone is safe and happy. Because when your staff is happy, they make our guests happy, and that is a cornerstone of the Morton's experience.

What is your favorite thing to eat at Morton's?

Well that is a very hard question, for the most part I am a filet mignon man, but sometimes I get our Cajun rib eye that we season for over 4 hours. It is so good; I have had dreams about it.
