Recipe: Classic Pancakes

Sometimes I treat pancakes like a blank canvas. I dump in all kind of things from my pantry and fridge: rolled oats, almond flour, blueberries, nuts, peanut butter. Everything but the kitchen sink ...

But there's something to be said for plain ol' classic pancakes.

Recipe: Strawberry Shortcake

As soon as my husband spotted the fresh strawberries I bought at the the grocery store two weeks ago, he started dropping hints about a certain recipe I made last spring. It's delicious, decadent, and actually a healthy alternative to most desserts or sweet breakfasts.

In fact, I think you'll find that it is pretty amazing if you love strawberries as much as I do ... which is a lot.

Ruth's Chris now offers brunch

Ruth's Chris Steak House is now offering Sunday brunch. Available at both Uptown and SouthPark locations, the brunch features starters, brunch selections (french toast, eggs benedict, etc), entrees (if you want to go for a steak), and a la carte sides. They are currently offering 1/2-price mimosas and bloody marys, too.

I'd highly recommend the Brioche French Toast which comes with a blackberry compote, maple butter, syrup, and a big bowl of fruit. Thick slices of brioche are perfectly cooked so they have a crispy exterior, and a perfectly soaked, un-soggy, interior. I'm thinking it may be my new favorite french toast in town.

My eggs benedict with crab cakes was delicious as well. The crab cakes were thick and meaty, filled with big chunks of crab.

Since the brunch service is relatively new and people might not know about it yet (it's been running for 5 weeks so far), there is no tortuous wait like there is at some brunch spots. (I visited the SouthPark location.)

With delicious food, a calm, sophisticated atmosphere, and impeccable service, Ruth's Chris offers Charlotte another great brunch option.

Brunch at Bask

Always ready to go brunching, I'm happy to announce there is a new brunch spot for you to check out.

Bask on Seaboard at the N.C. Music Factory is now open for Sunday brunch service. With an outdoor patio, it's a great place to catch some rays and grab a casual bite with friends.

From 11 am to 3 pm, they are serving up omlettes, an assortment of benedicts on brioche toast, smoked salmon on potato pancakes, orange french toast, and more. All brunch entrees come with your choice of side (homefries, baked muffin, grits, bacon, sausage or fresh fruit).

For my entree, I tried the potato pancakes ($8). The dish consisted of three mashed potato-like fried cakes topped with smoked salmon and a chive, dill cream. They don't skimp on the fruit – the side of fruit I was served consisted of a nice mix of melon, blueberries, raspberries, and blackberries.

As for the other brunch dishes at the table, they were well presented and pretty tasty. While you're there try one of their sanguine hand-squeezed blood orange mimosas.

Take a look at the scenery from Big View Diner

Big View Diner is certainly big, and you'll certainly have a great view ... of their baked goods on display when you first walk into the restaurant. The south Charlotte diner starts serving breakfast at 7 am everyday, and goes on to offer lunch and dinner until 10 or 11 pm.

Don't be fooled by the "diner" in it's name. You won't find an silver prefabricated restaurant with kitschy booths here. Big View is modern with high ceilings, wood accents, white web-like globe pendant lights, and just a few persimmon-colored retro accents around the restaurant.

On the menu you can find egg platters, an assortment of variations of egg benedict, buttermilk and buckwheat pancakes, two types of french toast, and also breakfast sandwiches. See the entire menu on their website.
