If you forgot to treat dad to a great meal on Father's Day yesterday, you can make it up to him by making this amazing, cheesy breakfast casserole. This stuff rocks my world. Loaded with breakfast sausage, potatoes, onions, eggs, and both Swiss and cheddar cheeses, this baby would be a great hangover helper too. No advanced cooking experience needed.

Ingredients:
1 pound breakfast sausage (casings removed)
1 medium sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded Cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese
Directions:
1. In a large skillet, cook sausage and onion until browned; drain. In a bowl, combine the remaining ingredients; stir in sausage mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
2. Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.

Eat Charlotte was created to foster a growing relationship between independent restaurants and their communities. The initial goal is to raise the profile of local restaurants that support the support the local economy and community. When I think of festival, I think of something like Speed Street: hundreds of people crowded in the streets, trash everywhere, short tempers ... not my idea of a great time.
But I have the feeling that the Round Peak Summer Wine Festival is nothing like that.
