Recipe: Breakfast Casserole

If you forgot to treat dad to a great meal on Father's Day yesterday, you can make it up to him by making this amazing, cheesy breakfast casserole. This stuff rocks my world. Loaded with breakfast sausage, potatoes, onions, eggs, and both Swiss and cheddar cheeses, this baby would be a great hangover helper too. No advanced cooking experience needed.
Breakfast Casserole
(adapted from Allrecipes.com)
Ingredients:
1 pound breakfast sausage (casings removed)
1 medium sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded Cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese
Directions:
1. In a large skillet, cook sausage and onion until browned; drain. In a bowl, combine the remaining ingredients; stir in sausage mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
2. Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.

Events Upcoming: Cigar dinner at Zebra Restaurant and Wine Bar

On Monday, June 22 at 6 p.m. Zebra Restaurant and Wine Bar, 4521 Sharon Road, will host a cigar dinner with special guest host Tom Kakadelis and sponsored by Outland Cigar Company and Bruce Julian Clothier. On the menu are Dominican Ambassodor Robusto, Ecuadoran Ambassador Churchill, and Cuban Ambassador Siglo 6 ciagrs; and Beef Tenderloin Diablo, Scallops and Shrimp in Angel Hair Basket, and a dessert sampler with Crème Brulee, Chocolate Pecan Tart, Lemon Curd Tart, and Coconut Dacquoise Torte. New restaurant Zoes Kitchen made a home at Blakeney Shopping Center recently. Join them for drinks and menu sampling to welcome them to town next Tuesday, June 23. The VIP party starts at 6 pm and goes until 9 pm.

Revolution Pizza in NoDa is having a beer dinner with New Belgium Brewery on Thursday, June 25. The dinner will include 5 courses, with each course featuring a New Belgium beer. The event starts a 7 pm and tickets are $35 per person.

Briana Cohen, founder of Eat Charlotte, announced that Friday, June 19, 2009 will be the launch date for the group’s web site. Eat Charlotte was created to foster a growing relationship between independent restaurants and their communities. The initial goal is to raise the profile of local restaurants that support the support the local economy and community. Originating members include: Andrew Blair's, Aquavina, Barrington's, Blue, Bonterra, Cafe Monte, Carpe Diem, Custom Shop, Fenwick's, Global, Good Food on Montford, La Vecchia's, Las Ramblas, Latorre's, M5 Modern Mediterranean, Mimosa Grill, Nix, Noble's, Pie Town, Press, Ratcliffe on the Green, Rooster's, Sonoma, Upstream, Zebra, Zink American Kitchen. Eat Charlotte restaurants will feature half price bottles of wine Friday, June 19 through Saturday, June 27, 2009.

When I think of festival, I think of something like Speed Street: hundreds of people crowded in the streets, trash everywhere, short tempers ... not my idea of a great time.
But I have the feeling that the Round Peak Summer Wine Festival is nothing like that.
Join Rockhouse Events as they sponsor a trip up to Mount Airy on June 27 to spend the afternoon at the vineyard, sampling the fruits from five different wineries.
