I posted a couple of weeks ago about my easy strawberry pudding and I just can't seem to get strawberries off my mind!
So this week, I want to introduce to you a bowl of good-for-you hearty oatmeal inspired by the flavors of spring.
For those of you who say you don't like oatmeal because it's bland, well I'm here to fix that. This oatmeal will make you a believer. It's slightly sweet from the honey and creamy from the ricotta cheese. The fruity flavors also add a touch of sweetness. Bland, it is not.
LEMON AND STRAWBERRY OATMEAL
1/3 cup old fashioned rolled oats
1/3 cup almond milk (or milk of your choice)
1/3 cup water
1/4 cup fat free ricotta cheese
1 tsp. honey
juice of half a lemon
zest of half a lemon
3/4 oz. chopped almonds
1/2 cup of sliced strawberries
Bring water and milk to a boil, then add oats. When the oatmeal has almost completely absorbed the liquid, add ricotta, lemon juice, and most of the zest (reserve about 1/4 teaspoon). Stir well to combine, then pour into a bowl and top with almonds and strawberries. Drizzle with honey and garnish the top of the oatmeal with the remaining lemon zest. Eat immediately while the oatmeal is still piping hot.
